    The Old Quarter has main streets and alleys. We only walk the alleys.

    You'll watch banh cuon — paper-thin rice crepes — steamed to order on a single piece of cloth stretched over boiling water. You'll eat them with a wooden chopstick at a stall that fits four people.

    You'll try quay (Vietnamese fried dough) the way it was eaten before it became a tourist photo. And you'll finish at an egg-coffee window so small you might walk past it three times before finding it.

    This is Hanoi at its most intimate.
